Spice-Rubbed Salmon with Tropical Rice_Celebrate Summer!


We both totally fell in love with this dish.  Salmon was sweet yet spicy and the mango rice was the perfect accompaniment.  Who doesn't love a ripe mango! Next to peaches, this is hubby's next best favourite fruit! 

Yep, if you closed your eyes you could feel the tropical breeze!  Definitely a keeper!  And within 15 minutes; dinner was literally on the table!  Gotta love that!

Directions:

Preheat oven to 450
Grease a shallow baking pan

Place 3 salmon filets (I used fresh) in baking  pan

Combine: 
1 T coriander seeds
1 T brown sugar
1 t lemon pepper seasoning

Sprinkle over fish and pat with your fingers so evenly coated

Bake 4 – 6 minutes / then quickly broil for 1 minute

Meanwhile;  Peel and cut up a ripe mango and add to
Cooked Uncle Ben’s Bristo Whole wheat brown rice (follow packet instructions)

And serve!
