In a Hurry Chicken Curry_Comfort Food at its finest!


We love this dish!  Less than 5 mins in the morning to prepare (while kettle boils for morning cup of tea) Cooks in the crock pot during work day.  Next to no effort; serve with some minute rice and warm naan and you will be in heaven! Especially on a rainy day like today!  



Ingredients
·           1  16 ounce package frozen vegetables (broccoli, cauliflower mix)
·           4  large skinless, boneless chicken thighs,(1 1/2 to 1 3/4 pounds)
·           1  can condensed cream of potato soup
·           2  teaspoons curry powder

Directions
1.    Place frozen stew vegetables in a 3 1/2- to 4-quart slow cooker. Top with chicken. In a small bowl, stir together soup and curry powder. Pour soup mixture over all.
2.    Cover; cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours.

Serves 4/300 calories per serving
