Hubby
spent $24.11 on 3 fresh catfish fillets from Loblaws Super store. When I opened package really wondered if we
could eat it all. Quite shocked as when
buying catfish at the local grocery store fillets only ¼ of the size!
Whoa!
Were we in for a surprise! Fish was
moist and succulent! Sweet even and the spicy
cornmeal mixture not only locked in the flavours of the fish but created a
slightly crispy crust with a bit of a bite (heat)! Cucumber, tomato & feta cheese salad was
perfect match. A friend stopped by and
asked if dish was worth the $ and hubby replied yes! Every bit as satisfying as
a steak and about the same in value as well.
Bayou
Catfish fillets
2 T
yellow cornmeal
1.5 T
salt
1.5 t
dried oregano
1 t
garlic powder
1 t
onion powder
¾ t
ground red pepper
½ t
chili powder
¼ t
ground cumin
¼ t
black pepper
6 6-oz
catfish fillets
cooking
spray
lemons
Preheat
broiler.
Combine
first 9 ingredients in a zip top plastic bag.
Add 1 catfish filet. Seal bag and
shake well. Remove fillet from bag and
place ona broiler pan coated with cooking spray. Repeat procedure with remaining fillets and
cornmeal mixture. Broil 6 inches from heat for 6 minutes. Carefully turn fillets over; broil 6 minutes
or until fish flakes easily when tested with fork. Serve with lemon slices, if desired.

Cucumber, Tomato and
Feta Salad
Combine in a large bowl:
1 c
cucumber, diced
1 c
tomato, diced
¼ c
kalmata olives, seeded, sliced
¼ c
green onions, green part only, sliced
¼ c
coarsely chopped fresh parsley
Whisk together:
2 T
lemon juice
1 t
garlic, minced
1 t
splenda
salt
& pepper to taste
Drizzle in: 2 T olive oil in a steady stream
Add:
3 T fresh mint, chopped
toss
salad and just before serving, garnish with:
¼ c
feta cheese, crumbled
