A jar of homemade pickled beets...


Started off with a jar of homemade pickled beets…

In a bowl combined:
About 1 cup of beets remaining in the jar
3 or 4 handfuls of mixed salad greens

approx. ¼ cup of the pickled beet juice
added couple jugs of olive oil to make the salad dressing

tossed salad
added a handful of dried cranberries for good measure

Warmed up a loaf of stone grain bread in the oven
Smothered each slice with herb flavoured goat cheese

And volia…

And it was quite tasty too!
