No Pasta Lasagna - Can it be?


Been spending far too much money on food and wine.  Time to tighten the reins. Hamburg is on sale this week at $2.99 lb.  All I need to buy is a tub of ricotta cheese @ $7 and a green salad and dinner is done!  Was hoping grocery bill less that $10 but ce la vie.



Dish is now sitting in oven and I am wondering how it will turn out.  Thanking God I have a loaf of Italian bread to sop up the gravy because I am afraid  that rather than lasagna it’s going to end up looking more like a fancy sloppy joe. 


Not nearly as bad as I imagined.  Held its consistency.    Very filling; and so it should be with the amount of cheese and meat used.  Easily feed 6-8 people; but there is only the 2 us and I am not quite sure as to how well it will freeze.

worth a try and if works would be wonderful for a work week lunch. 

Big question; would I serve to company?  No.  Well, maybe.  Depending on the amount of guests and if there were children at the table.  This is a dish that children would love.



No Pasta Lasagna 
1 onion - chopped
2 cloves garlic - minced
1 lb lean hamburger
1 can commercial no added sugar spaghetti sauce
1 16 oz tub of ricotta cheese
1/4 cup grated parmesan cheese
1 T dried parsley flakes
1 t salt
1.5 t dried oregano leaves
1 package frozen spinach - thawed and drained
2.5 cups shredded mozzarella cheese
2.5 cups shredded cheddar cheese

Preheat oven to 350.

Spray a 13' X 9' pan with Pam.  In a large skillet, cook and stir onion, garlic and hamburger until hamburger is broken up and browned. Add spaghetti sauce. While hamburger is cooking, combine in bowl ricotta cheese, parmesan cheese, parsley, salt, oregano, and spinach.

Layer sauce, mozzarella cheese, cheddar cheese, and ricotta cheese mixture.  Repeat.  Add another layer of sauce, any remaining cheese (a tad) and sprinkle with additional parmesan cheese.

Bake in oven for 30 minutes or until cheese is melted.

Let stand 15 minutes before serving.

Update:  Next day; so happy.  Neighbour is building a deck so I gave him remaining lasagna (he's still raving about the last dish I gave him) and I kept one serving back and will see how well it will freeze.  God is good!  Nothing has gone to waste.

  1. Neighbour Tim stopped by to thank you for the no pasta lasagna… Said it was good! He admitted that he did over do it that day (building his deck) and was grateful to have that on hand.. in other words, he was starving and poor Jake, his puppy dog, didn’t get anything ☺ Cheers
