Chicken, Macaroni & Lots of Cheese


What a wonderful summer night!  Made dinner and how did I know it would be shared with good friends.  Best made plans are no plans at all!  Dish got rave reviews and a good time was had by all.





Chicken Macaroni & Cheese
1.5 (6oz) whole wheat elbow macaroni
12 oz skinless, boneless chicken breast cut into 1 inch pieces
¼ c finely chopped onion
1.5 oz garlic roasted Havarti cheese
1 + 2/3 c skim milk
1 T flour
¾ c shredded cheddar cheese
2 c baby spinach
1 c cherry tomatoes, halved

In a medium sauce pan, cook macaroni as per pkg instructions

·       Meanwhile, coat a large non stick wok with Pam cooking spray; heat over med high heat
·       Add chicken and onion
·       Cook until chicken is no longer pink
·       Note if onions begin to burn reduce heat to medium
·       Remove skillet from heat and add Havarti cheese, stir til melted
·       Whisk together milk and flour
·       Add to chicken mixture and cook over medium heat until heated through, thickened and bubbly
·       Reduce heat to low and add cheddar cheese
·       Stir until melted
·       Take off heat and stir in spinach until wilted
·       Place in serving bowl and top with cherry tomatoes
·       Serve immediately
