BLT Salad


Tonight’s entry is really tomorrow’s lunch… going on a low cal diet this week as we really over did it this weekend!  BLT salad…. Low in carbs; easy to make and we will be enjoying Ontario cherry tomatoes!  And who doesn’t enjoy the taste of bacon?  Hearty salad that’s good for you too!  Packed a prosciutto and parmesan cheese sandwich for hubby along with a tub of freshly cut cantaloupe.
 
BLT Salad
3 c torn washed greens or spinach
sliced red onion
1 c grape tomatoes, halved
¼ lb bacon, crisp cooked, drained and crumbled (about 5 slices)
2 hard cooked eggs, peeled and chopped
¼ shredded cheddar cheese 
1/3 c bottled ranch salad dressing

Place greens in a large salad bowl.  Top with tomatoes, bacon and chopped egg.  Drizzle with dressing.  Toss well.

Serves 2.
