A hot humid sticky
day; but I am not complaining; I am rejoicing as we have had so few of these to
enjoy! This was a perfect dish to celebrate a summer day! Lemon roasted chicken topped with salsa made up of traditional greek flavours & feta cheese; served with rice and greek salad.
Greek
Salsa Lemon Chicken
Preheat
oven to 450

boneless skinless chicken breasts seasoned with salt and pepper
Brown
chicken on stove top until golden brown on both sides
Squeeze
lemon juice of 1 lemon over chicken
Add
another lemon cut into wedges into pan
Transfer
to oven and roast for about 30 minutes
Salsa:
Combine
in a bowl:
8 oz
crumbled feta cheese
1
pinte graped tomatoes halved
½ c
kalamata alives, pitted
½ c
fresh lemon jucie
½ c
extra virgin olive oil
½ c
minced parsley
2 T
chopped oregano
Once
chicken is done; transfer with lemons to a serving platter and top with salsa.
