Hot Gingered Beef and Broccoli Salad


Wow, will definitely make this dish again!  The ginger vinaigrette dressing with toasted sesame seeds is what gives this dish its zing!  Quick and easy to prepare; dinner on the table in less than 20 minutes!  

Hot gingered beef and broccoli salad

12 oz beef sirloin steak
2/3 cup bottled light ginger vinaigrette salad dressing
3 cups of broccoli florets
8 cups mixed spring salad greens
1 med red sweet pepper, cut into bite sized strips

Directions:

Trim fat from the beef; thinly slice across the grain into bite sized strips.
In a wok or large skillet, heat 2 T of salad dressing over medium high heat.  Add broccoli.  Cook and stir for 3 minutes.  Add beef to wok.  Cook and stir for 2 to 3 minutes more until meat is slightly pink in centre.  Remove beef and broccoli from wok.
In a large bowl, toss together beef, broccoli, salad greens and sweet red pepper.  Drizzle with remaining salad dressing. Toss to coat.
Makes 4 servings.

Surfed the web quickly for ginger vinaigrette; thankfully had all ingredients at home!  Adapted to the following:

1/2 cup sesame oil
1/4 cup rice vinegar
1 t minced ginger
½ T  soy sauce
