Broccoli Lentil Soup


I love this soup!  And believe it or not; because it loaded with fibre, it fills you up thus promoting weight loss! Not only does it aid in detoxifying the body; its tastes good & is good for you too!  Win/Win!



1 ½ tbsp coconut oil
2 tsp crushed garlic
¾ cup chopped onion
1 tsp sea salt
1 large carrot, chopped
1 celery stalk, chopped
1 tbsp dried basil
3 cups chopped broccoli (1 large head)
¾ cup dried green lentils
4 cups (1 L) chicken broth


Directions:
Heat the oil in a large soup pot over medium heat.
Add onions and garlic and sauté for 3 minutes.
Add the carrots, celery and basil and cook for a few more minutes until coated in spices.
Add the rest of the ingredients (except the broccoli) and bring to a boil. 
Reduce heat and simmer for 45 minutes to an hour covered.
Cut broccoli into small florets, then add to the pot and cook for 10 more minutes.
Using a wand blender or pour into blender and puree till smooth.
