Teriyaki Mushroom, Spinach and Chicken Salad


Inspired; now that I have moved to the 21st century!  Have just purchased my 1st smart phone and my posting my 1st official "blog".

Crazy busy hectic day at work but ain't they always :)  Remembered to call K at about 3pm.  What did he feel like for dinner?  He's working a double today... therefore something that is quick and not too much work...

Teriyaki Mushroom, Spinach and Chicken Salad, let's try that.




Definitely a keeper! Very tasty; definitely filling.  Hardest and longest part; slicing shitake mushrooms!  Recipe called for 10 cups; but at $4 a packet/$12 in total; only used 4 cups.  Start to finish; ready to sit down and eat in 30 mins.

And calorie friendly too!  South Beach Phase II maybe.   So I made a portion for 4 but as that was only thing on our dinner menu at only 205 calories a serving could afford to eat double portions guilt free.  

Dish could be used as a side dish when serving an Asian themed dinner party.

mmm that's food for thought
