Chicken Cordon Bleu served with ......


Hubby wants to go on a diet  and  I wouldn't mind if I lost 5 - 10 lbs.   Time to pull out my Low Carb & South Beach Diet cookbooks.  Keith's parents are coming over for dinner tonight and skinless boneless chicken is on sale this week at Metro.




Chicken Cordon Bleu
4 skinless boneless chicken breasts halves (1.25 lbs)
4 slices of prosciutto
4 slices of swiss cheese
1 T butter or margerine

Place each chicken breast half between 2 pieces of plastic wrap.  Working from the centre to the edges, pound slightly with the flat side of a meat mallet to an even 1/8 inch thickness.  Remove plastic wrap.

Place 1 slice of prosciutto and 1 slice of the cheese on each chicken piece.  
Fold in at the bottom and the sides, roll up in a spiral and secure with toothpicks.

In a 10 inch skillet, melt butter or margerine in med low heat.  Add chicken rolls, cook 20 - 25 minutes until no longer pink, turning to brown evenly.  

To serve, remove toothpicks.  

Green Beans, Mushroom & Bacon
Blanche 8 oz of green beans in a pot of boiling water, drain and set aside
Saute 2 pieces of bacon in large pan over med high heat
Add and continue to cook until carmeliized
-  4 oz of mushrooms, sliced
-  1/4 cup of shallots, minced
-  1 t of Splenda
Deglaze the bottom of the pan with
-  3 T of white wine vinegar
Toss with green beans and serve immediately.





Baked goat cheese & Pancetta salad

4 pieces of speck (thick bacon/smoked prosciutto)
4 ¼ inch rounds of young goat cheese
4 cups of mixed baby salad greens
¼ c olive oil  
1 T red wine or apple cider vinegar

Wrap bacon around the sides of the goat cheese rounds
Arrange on a baking sheet lined with tin foil
Place in oven or broiler and cook until bacon starts to sizzle and cheese begins to melt

Toss salad with the remaining ingredients and arrange on 4 serving plates
Top each plate with goat cheese
Serve immediately


Can taste it now!  Prosciutto & cheese will the stars of the show tonight. 
What can compete with that!
