This
dish is a working girl’s dream; easy to prepare (20 mins) and only 310 calories! Left the table feeling satisfied. Not too heavy and due to low calorie count can
have a helping of dessert guilt free!
1 large red pepper
6 cups of water
1 T salt
6 oz of uncooked penne
1 t salt
2 cups of chopped arugula
¼ c thinly sliced/chopped shallots
2 T red wine vinegar
1 T capers, drained
1 T extra virgin olive oil
1 jar of tuna packed in oil, drained
Freshly ground pepper
Preheat broiler
Cut bell pepper in quarters, remove seeds and membranes.
Place peppers, skin side up, on foil lined baking sheet; flatten
with hand. Broil 15 mins until
blackened.
Place in a zip top plastic bag; seal. Let stand 15 minutes.
Peel and chop
Bring water and 1 T salt to a boil.
Cook pasta according to directions.
Drain and rinse with cold water.
Drain well.
Combine bell pepper, pasta, 1 t salt, arugula and remaining
ingredients in a large bowl. Toss
well.
Garnish with ground pepper.
