Avocado Chicken Salad


Out with the girls last night; didn’t get home til 1:00 am.  What was I thinking?  Needless to say; didn’t take anything out for dinner; forgot to even bring in a lunch; but at least I made it into work! So, what can I make that would be easy and no fuss; using ingredients I have home in the fridge?





Avocado Chicken Salad
2 T olive oil
2 T fresh lime juice
3/8 t kosher salt
1/8 t freshly ground black pepper
2 cups shredded skinless, boneless rotisserie chicken breast
1/4 cup chopped fresh cilantro
3/4 cup refrigerated fresh salsa
1 ripe avocado, peeled and chopped
3 ounces tortilla chips

Combine first 4 ingredients in a medium bowl, stirring with a whisk.

Add chicken and cilantro; toss to combine. Gently fold in salsa and avocado.

Serve with chips.

Definitely a keeper;  a dish that I will make again and again.  Refreshing, filling, works well with a cold beer.
