Filet Mignon with Sherry Mushroom Sauce

What an excellent ending to a perfect hot summer day!  Who wants to slave over a hot stove or spend unneeded time in the kitchen. Picked up some beef tenderloin steaks.  Actually debated at the cost/ $30 for 4 steaks but hey you only live once!

Simple ingredients and easy to prepare. Did not have any beef broth so used vegetable broth instead; nice surprise; gravy was light and surprisingly you could still taste the sherry.  Definitely a company dish.  Next time I would double up on the gravy so that there was more to go around.  Steaks were like butter!  Served with mashed potatoes, broccoli & cheese & red onion salad, green beans, mashed cauliflower and corn on the cob.

Our good friend joined us for dinner and brought over a bottle of Lindeman's Cawarra Shiraz-Cabernet which complimented the meat perfectly!
