I made this dish when hosting Christmas dinner for my
family for the first time almost 20 years ago!
It was well received by all both then and now!
Green
Bean, Walnut and Feta Salad
2 lbs of fresh green beans, trimmed
1 small red onion, thinly sliced
4 oz of crumbled feta cheese
1 c walnuts, coarsely chopped and toasted
¾ c olive oil
¼ c white wine vinegar
½ t minced garlic
¼ t salt
¼ t pepper
Steam cut green beans in a steamer basket over boiling
water. Cover and steam approx. 15 mins
or until crisp. Plunge into cold water
to stop cooking process; drain and pat dry.
In a large bowl toss together; green beans, onion, cheese
and walnuts. Cover and chill for 1 hour.
Whisk together olive oil and next 5 ingredients; cover
and chill for 1 hour.
Pour vinaigrette over green bean mixture and chill for 1
hour. Toss just before serving. Makes 8 servings.
