A
definite hit in this household! I will never serve frozen fish nuggets
again! So surprised at how easy to
assemble and how moist and yet crispy they were. Even though sitting in oven 15 mins while waiting for company to arrive! Do not take my word; this was a comment shared
by both young and old! This dish has
become a staple in my household and hopefully in yours.
1 c
panko
1 T chopped
fresh thyme
1/2 t
salt
1/2 t
pepper
1/2 c
all-purpose flour
2 T water
1 egg,
lightly beaten
1 lb cod
fillets, cut into 1-inch pieces $]
Preparation
Preheat
oven to 400°.
Heat a
large skillet over medium-high heat. Add panko and thyme to pan; cook 2 minutes
or until golden brown, stirring frequently.
Combine
panko mixture, salt, and pepper in a shallow dish. Place flour in another
shallow dish. Combine 2 tablespoons water and egg in another shallow dish.
Dredge
fish in flour mixture. Dip in egg mixture, and dredge in panko mixture. Arrange
fish in a single layer on a baking sheet coated with cooking spray.
Bake
fish at 400° for 12 minutes or until done.
Serve
with prepared tartar sauce.
