Found this recipe via Google as I wanted to make cookies for the folks at
work; A colleague expressly wished for a cookie made with coconut. This recipe was a hit on all counts! Even with those who don’t especially care for
coconut!
Chococonut Chip Cookies
½ c butter
½ c white sugar
¼ c light brown sugar
1 egg
½ t vanilla
1 c & 2 T all purpose flour
½ t baking soda
½ t salt
1 c semisweet chocolate chips
1 c flaked coconut
Preheat oven to 375 degrees
In a large bowl cream together the butter, both sugars
until light and fluffy. Beat in egg and
then stir in vanilla. Combine the flour,
baking soda and salt. Stir into the
creamed mixture. Fold in chocolate chips
and coconut. Drop by rounded spoonfuls
onto cookie sheets.
Bake for 8 – 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5
minutes before removing to wire rack to cool completely.
Yield: 36
cookies/85 calories per cookie.
