Spicy Honey - Brushed Chicken Thighs



Totally blown away!  Hubby has already stated he cannot wait until I make again.  And it was so easy; it only took 5 minutes to prepare!  

But beware 1 serving (2 chicken thighs) is not enough!!  Made 8, I had 3 and hubby had the rest!  Served with a simple garden salad  (salad greens with olive oil & balsamic vinegar dressing) which hubby claimed was the perfect compliment to the flavours of the meat.

2 t garlic powder
2 t chili powder
1 t salt
1 t cumin
1 t paprika
½ t ground red pepper
8 skinless boneless chicken thighs
cooking spray
6 T honey
2 t cider vinegar

Preheat broiler.

Combine first 6 ingredients in a bowl.  Add chicken to the bowl; toss to coat.

Place chicken on a baking sheet sprayed with cooking spray.  Broil chicken for 5 – 7 mins each side.

Combine honey and vinegar mixture in a small bowl.  Remove chicken from oven and turn over.  Brush honey mixture over chicken and broil 1 minute or until chicken done. 

4 servings/2 thighs per serving

Adapted from what I think is a cooking light recipe; this was a photocopy of my collection of recipes to try.  Definitely a keeper and I look forward to making again with family and friends.
