Greek Feta Lamb Burgers & Simple Greek Salad


This dish is a hit in our household and even tastes good cold the next day!  They are quite filling and served with a simple greek salad makes this the perfect work night summer time meal!

Greek Feta Lamb Burgers

Ingredients:
½ chopped onions
1 cup chopped mushrooms
2 oz feta cheese
1lb ground lamb
¼ cup chives
3 T oregano (fresh) or 1.5 t (dried)
2 T bbq sauce
2 T breadcrumbs
2 t crushed garlic
1 egg

Directions:

In a nonstick skilled sprayed with nonstick spray, sauté onions and mushroom until lightly browned.

In a bowl mix remaining ingredients.

Add onion mixture and form into 4-5 patties

Cook on bbq or on baking sheet in oven at 350 degrees until no longer pink inside.

Approx 260 calories

Simple Greek Salad

This is my go to Greek Salad dish which I serve along side many dishes:  Greek Feta Lamb Burgers, Mini Greek Style meatloaves, Lemony Chicken or simply serve inside a warm pita on a hot warm day as lunch.

Ingredients:
1 10 oz package of salad greens
½ cup of olives, pit removed
2 plum tomatoes, cut into wedges
½ cup of sliced red onion
½ cucumber, peeled and sliced in half and cut in to slices
4 oz feta cheese

Dressing:
½ c of olive oil
¼ c of lemon juice
1 tsp of minced garlic (in jar with olive oil)
1 t oregano (dried)
pinch of salt and pepper

Mix dressing ingredients and set aside.
Toss Salad ingredients together in a bowl.
Add salad dressing, toss and sprinkle with feta cheese
