Rustic Beef Stew


Crockpot really is a busy girl’s best friend.  Up at 4:15 am in order to cook 84 sausages before catching 6:14 train into the office.  Busy day.  Run for the Cure breakfast fundraiser.  A very good cause in so many ways; not only raising $$ for a good cause, but its great working with colleagues cooking and preparing for event and for the others that simply enjoy the food fest! Everybody wins! I also prepped tonight’s dinner dish before washing up and getting ready for work

Wonderful to come home and dinner is ready to serve; especially when beat and just want to crawl into bed! 



Rustic Beef Stew
2 t olive oil
2 lbs stewing beef (from Highland Farms, better quality)
salt
ground black pepper
1 cup of marsala wine
2 large carrots chopped (2 c)
2 med onions chopped (1.5 c)
2 large kitchen tablespoons of minced garlic
½ c beef broth
1 T tomato paste
1 T fresh rosemary
1 T dried thyme
1 bay leaf

Add olive to pan, heat; add beef dash of salt & pepper and cook until browned.  Remove from heat and transfer meat into crockpot.

Pour wine, carrots, onion, garlic, beef broth, tomato paste and remaining ingredients.  Cook bringing to a boil stiring to get all brown bits from meat.  Pour into crockpot.

Add another splash of wine and cook on low for 6:00 am to 5pm.

Delicious.. Serve with warm bread!
