Sunday supper / company worthy whole 30 dish!
- 3
     T olive oil
- 6
     plums, halved & pit removed
- 1
     t  cinnamon
- ¼
     t nutmeg
- 1 red onion, cut into
     thin slices
Preheat
oven to 350.  Line a baking sheet with parchment paper
Pat the
pork tenderloin dry and coat with 1 T of olive oil.  Place in pan
Toss the
plums with 1 T olive oil and spices.  Add them to the sheet pan
Coat the
onion slices with the remaining tablespoon of olive oil and add to pan.  
Sprinkle with salt & pepper and roast uncovered for 25 to 30 mins.
