Spinach Salad with Bacon & Dijon Mustard Vinaigrette



On a mission to start the new year off light.  Discovered the perfect companion to my crustless feta, cheddar cheese quiche; spinach salad with bacon & Dijon mustard vinaigrette



Started off with 3 pieces of bacon
Fry until desired doneness, remove from frying pan
Once cooled, dice and set aside.

Drain all but 2 T of bacon fat from frying pan
Add 3 minced shallots (about 2T)
Cook 1 minute or until golden brown

Add: 
½ c apple cider vinegar
1 t sugar
1 t Dijon mustard
1 t red pepper flavored olive oil

Bring to a boil. 

Remove from heat and pour mixture over 2 cups of fresh spinach greens.  Add 1/s of the chopped bacon, toss together and divide onto 2 serving plates. 

Divide remaining bacon and sprinkle half on each plate and serve immediately.

Served with Crustless Feta Cheddar Cheese Quiche.  Yum!  And left the table feeling quite full.
