Ingredients:
1 T olive oil
2 onions, chopped
1 carrot, chopped
3 garlic cloves, chopped
1 cup, dried green split peas, rinsed
2 c of water
1 - 900 ml container of vegetable broth
3 cups of frozen green peas
Directions:
Heat oil in a pot. Add onions and carrots and cook until tender. (3 - 5 mins)
Add garlic and cook for 2 more minutes
Stir in split peas until coated
Add water and broth. Bring to a boil and reduce heat to med-low.
Simmer, partially coverted, until peas are very tender. (about 45 mins)
Add frozen peas and cook for 2 mins more.
Puree soup, in batches, in a blender until smooth.
Optional: garnish with bacon bits and chopped chives
