Lemony Lentil Soup


I’m in love!  
Simply refreshing; lemon fills your senses 
(both the aroma and the taste)
Easy to make and good for you too!  
Definitely a keeper!

3 T grape seed oil
3 large carrots, diced
1 large onion
4 garlic cloves, minced
3 t dried thyme
6 c vegetable broth
1.5 c red lentils
¾ t salt
ground pepper to taste
lemon zest
juice of 1 small lemon

Instructions:

Heat oil in medium pot; add carrots & onions and cook on medium heat stirring often until tender.  Add garlic and thyme and cook for 1-2 minutes until fragrant. 

Add broth, lentils, salt and pepper and bring to a boil.  Reduce heat and simmer with pot partially covered for 30 mins or until lentils are tender.

Stir in lemon juice and lemon zest.

Ready to serve.
